Shrimp Toast

12 fresh uncooked large shrimp
1 egg
2 1/2 tb cornstarch
1/4 tsp salt
Pinch of pepper
3 slices of sandwich bread
1 hard cooked egg yolk
1 slice cooked ham (30 grams)
1 green onion
2 cups vegetable oil

Step 1:
Start by removing shells from shrimp and devein, ensuring the tails are intact. Cut down on the back of shrimp with sharp knife and gently press shrimp with fingers to flatten.

Step 2:
In a small bowl beat 1 egg, cornstarch, salt and pepper until well combined. Add shrimp to egg mixture and toss until shrimp are evenly coated and set aside.

Step 3:
Remove crusts from bread and cut each slide into even quarters . To assemble, place one shrimp (cut side down) on each quarter and gently press shrimp to adhere to bread. Brush a small amount of the egg mixture over each shrimp.

Step 4:
Cut the egg yolk and ham into 1/2 inch pieces and finely chop green onions. Place one piece of egg yolk, ham and 1/4 tsp chopped onion on each shrimp.

Step 5:
Using the wok burner on your Euro Cooktop, heat oil over medium-high heat until it reaches 190°c. Fry 3 to 4 shrimps bread pieces at a time until crispy and golden brown (1 to 2 minutes on each side). Drain on absorbent paper, serve and enjoy!
